
Financial Benchmarks
In 1997/98, the Restaurant & Catering Industry Statistics Project was conducted through Restaurant and Catering Australia, released in 1999, the report was prepared by Dr Beverly Sparks, Ms Renata Tomljenovic, Ms Tess Collie, & Professor Richard Morey.
This report, was the best available information to reflect industry trends. I believe that R& C Australia continue to collect statistical data, however I have not found any recent reports that have been released. Updates have been provided with the recent census but these seem to be an adjustment rather than any reflection on actual figures in the work place.
The reason that I found the data to be worthwhile is that it reflected groups of businesses by turnover.
- Businesses that had turnover less than $250000
- Businesses that had a turnover of between $250000 and $ 1 Million
- And those businesses that had turnover over $1million dollars.
During the past eight years legislation has changed, (in the employers contribution to Superannuation, and the introduction of GST particularly) and this has made the report somewhat redundant, the reference to the prime costs of running a restaurant still run true, for me.
There are other benchmarking surveys available but I have found these to be unreliable in the marketplace as their reporting on Prime Costs is out of context with actual results that have become relevant to my experience.
