Wellingtons was established in 1994 to provide advice and operational support to hospitality owners, investors and managers. At that time I was frustrated by the lost opportunity for good concepts and talented individuals to stay in the industry due to their inability to develop a profitable business.
Having a passion for food and beverage and creative flair was not enough. Small operators need access to business advice and systems that are tailored specifically for our business.
My own background is in diverse operations: I have had my own restaurant at Berowra Waters, and have operated and managed nightclubs, Coffee Shops, and Fine Dining Rooms. My career greatly developed through working within international hotels with experience in SPHC, Conrad Jupiters and the Sheraton Hotel group where I was fortunate to develop the disciplines of good management and where the only acceptable result was a profitable bottom line.
After completing an MBA at Bond University I relished a different role - teaching within the Blue Mountains Hotel Management School in Food and Beverage and Hospitality Management. I returned to the industry that I love – firstly in an operational role and then changing tack to establish Wellingtons Hospitality Services.
In recent years I have forged many networks with like minded professionals who have developed tools, strategies, systems or are simply willing to share their ‘war stories’ and become mentors for new operators. This website provides a forum for experienced and new operators and owners to use their experience.
